MGO levels in Manuka honey refer to the concentration of methylglyoxal (MGO), the primary compound responsible for its exceptional non-peroxide antibacterial activity. This sets Manuka honey apart from regular honey, which mainly relies on hydrogen peroxide for its antimicrobial effects (a compound that can break down easily with heat, light, or enzymes).

The Science Behind MGO

• Origin: MGO forms naturally in Manuka honey through the conversion of dihydroxyacetone (DHA), a substance present in high amounts in the nectar of the Manuka bush (Leptospermum scoparium), native to New Zealand. Over time (especially during storage), DHA converts to MGO, which is why some honeys gain potency as they age.
• Key discovery: In 2008, German researcher Thomas Henle identified MGO as the dominant bioactive compound driving Manuka honey's unique antibacterial strength. Studies show a strong linear correlation between MGO levels and antibacterial potency, particularly against bacteria like Staphylococcus aureus, E. coli, and acne-causing Propionibacterium acnes.
• How MGO works: As a reactive 1,2-dicarbonyl compound, MGO disrupts bacterial cell processes, inhibits growth, and kills pathogens effectively. It remains stable in honey (unlike hydrogen peroxide in other honeys), providing long-lasting, non-peroxide antimicrobial action. Research indicates minimum inhibitory concentrations (MIC) for MGO against many bacteria in the range of 0.150–0.310 mg/mL, with stronger effects at higher levels.
• Measurement: MGO ratings are expressed in mg/kg (milligrams per kilogram of honey). For example:
  • MGO 100+ means at least 100 mg of methylglyoxal per kg.
  • MGO 550+ means at least 550 mg/kg.
  • MGO 1123+ (like in our Organic Manuka Aureum Balm) indicates an ultra-high level — over 1,123 mg/kg — placing it among the most potent grades available, far exceeding entry-level therapeutic honeys (often around 100–250+).

Higher MGO levels directly translate to greater antibacterial strength, with studies confirming that concentrations above ~150 mg/kg are primarily responsible for Manuka's signature bioactivity.
