Suet is exclusively the fat that surrounds the kidneys and loins of the cow. It is higher in vitamins, nutrients, and essential fatty acids rather than beef fat. Beef fat is any fat that comes from the cow and is much cheaper to make (because there’s a LOT more of it) but also it’s much lower in vitamins and nutrients than true tallow. Technically beef fat that does not come from the kidneys\/ loins should not be called tallow but that doesn’t stop many companies from calling it tallow.
